Simple Strawberry Cake (recipe)

Ingredients
3 cups all-purpose gluten-free flour OR unbleached all-purpose flour
1 1/2 teaspoons xanthan gum (omit if using unbleached flour)
1 teaspoon salt
1 1/2 teaspoons cinnamon
2 cups sugar
1 teaspoon baking powder
20 oz. sliced rinsed fresh strawberries OR frozen strawberries, thawed
4 eggs, beaten
1 1/4 cup oil
1/4 cup powdered/ confectioners sugar (optional as topping)
Directions
1. Preheat oven to 350 degrees, and move rack to the center of the oven.
2. Lightly grease a 9x13 pan or a 10 in. spingform pan or 2 loaf pans, and set aside. I used a 10 in. springform pan, and lined bottom with parchment paper.
3. In a large bowl (or mixer bowl), thoroughly mix all of the dry ingredients together.
4. Make a well in the center of the mixing bowl, add the strawberries to the center, pour the beaten eggs in the center, and then add the oil to the center.
5. Using a hand mixer or electric mixer, stir all ingredients together until well combined.
6. Pour in prepared pan(s), and bake for 50 to 60 minutes or until inserted toothpick comes out clean.
7. Remove from oven, and let cool 15+ minutes before serving.
8. Lightly dust top of cake with powdered/ confectioners sugar.
