Moist Marble Cake (recipe)

Ingredients
Cake
1/2 cup semi sweet chocolate chips, melted and cooled
3 cups all-purpose gluten-free flour OR unbleached all-purpose flour
1 1/2 teaspoon xanthan gum (omit if using regular flour)
1/2 teaspoon salt
1/2 teaspoon baking soda
2 1/2 teaspoons baking powder
1/2 cup vegetable oil
1/2 cup unsalted butter, melted and cooled
2 cups sugar
4 large eggs
2 teaspoons vanilla
2 drops almond extract
1 cup milk
1/2 cup grated chocolate or minced chocolate chips (optional)
Frosting
6 tablespoons butter, melted
6 tablespoons unsweetened cocoa powder
2 tablespoons honey
2 teaspoons vanilla
2 cups confectioners’ sugar
Directions
1. Preheat oven to 350 degrees, and move rack to center.
2. Lightly grease a 10 inch springform pan, a 9 by 13 inch pan, or two 9 by 5 inch loaf pans.
3. Melt chocolate and set aside to cool.
4. In a medium bowl, whisk the flour, xanthan gum, baking soda, baking powder and salt.
5. Make a well in the center of the flour mixture, and blend in the oil, butter, sugar, eggs, vanilla, almond extract and milk. Stir to make a smooth batter.
6. Remove about 1 cup of batter and stir cooled chocolate into it.
7. If using chocolate chips, stir them into white batter.
8. In prepared pan, place three-quarters of the remaining batter, then the chocolate batter, then top with remaining white batter. Note: It doesn’t matter if the batters are not evenly dispersed. The top batter can spread on or dropped by spoonfuls.
9. Put cake in oven, and bake until cake for 50-60 minutes until toothpick comes out clean.
10. While the cake bakes, make the frosting. In a medium bowl, thoroughly combine all frosting ingredients until a thick consistency.
11. Once cake is done, let cool 10-15 minutes, then frost while warm.
