Meatless Monday!

Today’s my 1st Meatless Monday! Why? For my health and the health of the planet. Plus I was vegetarian for almost 13 years and enjoy vegetarian fare!
Here’s what I ate if anyone’s interested!
Breakfast:
Honey Nut Chex (GF) w/ vanilla coconut milk (my new obsession) and a glass of Naked Juice
Mid-Morning Caffeine:
Bhakti Chai w/ almond milk (no coconut milk at my fav nearby coffe shop)
Lunch:
Leftover butternut squash risotto w/ green peas and 1 organic banana
Snack:
Roasted/ salted almonds & organic honey crisp apple (expensive but best apple ever!)
Dinner:
