Oatmeal Chocolate Cranberry Cookies
Yesterday’s big snowstorm really made me crave oatmeal cookies. I found another great GF recipe from Bob’s Red Mill, and changed it a little to include chocolate chips and dried cranberries instead of raisins. If you’re a traditionalist, then you can omit these and use raisins.  Ingredients 1 1/2 cups Bob’s Red Mill GF All-Purpose Flour 3 cups GF Rolled Oats 1...

Raspberry Crisp
Yesterday afternoon as I was digging around the fridge, I found/ remembered I bought a pound of fresh raspberries from Costco. I quickly jumped online and discovered this super easy recipe for a fruit crisp. You can use raspberries, blueberries, cranberries, strawberries, blackberries, pears, or apples! Ingredients 3 cups fresh raspberries -or- blackberries - frozen won’t work because...

Mushroom Risotto
This risotto is amazing! I found the recipe from AllRecipes.com, and slightly changed it. The recipe is time-intensive and takes about 30-40 minutes prep time, plus 20-30+ minutes cooking time (longer if you live at altitude). Ingredients 6 cups chicken broth, divided *I used Swanson’s which I confirmed online that it’s GF 3 tablespoons olive oil, divided 1 pound portobello...

Black Forest Cake
My boyfriend’s favorite dessert is Black Forest Cake, so I decided to try out a GF version for his birthday on Saturday.  I tweaked a recipe found online, so I’ll include details for this one.  Cake Ingredients: 5 eggs 1 cup sugar 1/2 cup Bob’s Red Mill GF All-Purpose Flour 1/2 cup cocoa 6 Tbsp. butter, melted 1/2 tsp. xanthan gum For the filling & topping: ...

Awesome GF Apple Pie with Crumble Topping
Awesome indeed. This pie was incredibly tasty, and you’d never know it was GF. The pie consists of three parts: -pastry crust (makes 2 crusts, use one now/ freeze one for later) made w/ GF flour (I used Bob’s Red Mill AP GF flour), cornstarch, sugar, xanthan gum, butter, egg, & vanilla -apple filling created by combining apples, sugar, cinnamon, nutmeg & salt -crumble...

Chocolate chip cookies!
One of my fondest memories growing up is making homemade chocolate chip cookies with my mom and sister. We’d bake up a big batch, and when mom would take a break to catch a few minutes of her favorite soap opera, my sister and I would sneak a few bites of the cookie dough. Sneaky sneaky, tasty tasty! For both the enjoyment of dough and end-result tasting, I was super psyched to try this...

Chocolate Cake #2 - Success!
Mmmm…chocolate Last Monday, after the almond flour chocolate cake disaster, I felt motivated to try again. This time I found a simple flourless recipe, consisting of semisweet chocolate, butter, sugar, cocoa powder, eggs, & vanilla extract.  I decided against any doubling this time for fear of what happened with the almond flour fiasco.  The most complicated part of this recipe is...

Chocolate Cake Part 1
*What the cake should have looked like My most recent adventure in gluten-free (aka GF) happened 2 weeks ago when I tried to make a double-layer almond flour chocolate cake. Sounds simple enough, however, living at altitude always poses its unique set of baking weirdness (i.e. I’m always increasing baking time by at least 5-30 minutes).  I used a recipe from a local chef, Elana Amsterdam,...
